Why write such a book when so many exist?

Anthony unsuccessfully tried for years to replicate the Indian Restaurant tastes in his kitchen. He used many of the books which promised to pass on the required secrets but found them to be severely lacking. Very dissatisfied, Anthony decided to discard the books which shed hardly any light on this subject and decided to learn for himself. How hard could it be?

It was at this point he discovered the Indian Restaurant business was (and still is) very closed, shrouded in extreme secrecy. But isn't it true many other Restaurants jealously guard the recipes and secrets which allow them to produce the exquisite dining experiences many of us love?

Armed with the same determination which allowed Anthony to self finance his Commercial Pilot training, he managed to find three professional chefs willing to show him the secrets, tricks and techniques used in Indian Restaurants. More importantly he was allowed to document all he saw, as long as he guaranteed their anonymity.
