Chapters 1 to 4
These first chapters of Curry Wizardry - Become a Curry Sorcerer Like The Restaurant Chefs will introduce you to the ingredients, techniques and secrets employed in the Indian Restaurant business. During these few chapters the foundation knowledge and skills will be taught which will be developed throughout the rest of the book, transforming you into a Curry Wizard - like the restaurant chefs.
Chapters 1 to 2 - Spices
Learn about the spices used in this type of cooking. These chapters discuss the spices used in the Indian Restaurant; how to select, prepare, store and use them correctly. Some of the revelations will be surprising and the lessons learned can be transferred to other cuisine types as you will be learning the fundamentals of spice utilisation.
This section will teach you about one of the main spices used in Indian Restaurant cooking, Garam Masala. As with all aspects of the book, the blend given was taught to the author by restaurant chefs and comprises thirteen separate spices. This is one of the elements which give Indian Restaurant curries their intense, distinctive flavour. As a comparison, many of the commercially available blends of Garam Masala contain no more than five spices.
Chapter 3 - Curry Sauces
The Magical curry sauce. Ask any restaurant chef and they will most likely deny its existence. Contrary to what you may hear, this elixir does exist and this chapter will show you how to prepare not one but two of these sauces, which complement curries from all regions of India. This is the very sauce used in Indian Restaurants, bringing all the flavours together to culminate in the tastes we love in restaurant curries. After reading this chapter you too will possess that secret weapon - like the restaurant chefs.
Chapter 4 - Base Curries
Once you complete this chapter, it will become apparent how Indian Restaurants are able to prepare so many different curry dishes for a takeaway or sitdown meal in less than an hour. By creating the base curries in this chapter you too will acquire this restaurant trick enabling you to create many different curry dishes in a short time - like the restaurant chefs.
